🍰 Crunchy Apple Quark Cake with Raisins

Ingredients
- butter 180 g
- wheat flour, Type 405 330 g
- powdered sugar 90 g
- eggs 5 pcs
- salt pinch
- water 2 tbsp
- raisins 70 g
- white rum 2 tbsp
- lemons 1 pcs
- apples, red 600 g
- quark 40 % Fett i.Tr. 500 g
- sour cream 200 g
- sugar 75 g
- cinnamon 1 tsp
- cornstarch 40 g
- almonds, sliced 70 g
Instructions
- 1. Cut the cold butter into small cubes.
- 2. Place the butter cubes in a bowl.
- 3. Add flour, powdered sugar, one egg, salt, and cold water.
- 4. Knead the ingredients into a smooth dough using your hands.
- 5. Place the dough in the refrigerator and let it rest for at least one hour.
- 6. Put the raisins into a small bowl.
- 7. Pour rum over the raisins and let them soak.
- 8. Cut the lemon in half.
- 9. Squeeze the juice from the lemon.
- 10. Lightly dust a work surface with flour.
- 11. Take the dough out of the refrigerator.
- 12. Roll out the dough into a round shape.
- 13. Line the bottom of a 26-centimeter springform pan with baking paper.
- 14. Grease the sides of the pan.
- 15. Place the rolled-out dough into the pan.
- 16. Press a high edge out of the dough.
- 17. Prick the dough base several times with a fork.
- 18. Place the prepared pan in a cool spot.
- 19. Peel the apples.
- 20. Quarter the apples.
- 21. Remove the cores.
- 22. Cut the apple pieces into wedges.
- 23. Mix the apple wedges with the lemon juice.
- 24. Add quark, sour cream, sugar, cinnamon, and eggs to a separate bowl.
- 25. Thoroughly mix the quark mixture.
- 26. Briefly fold the starch into the quark mixture.
- 27. Preheat the oven to 180 degrees with top and bottom heat.
- 28. Sprinkle 40 grams of almond flakes onto the shortcrust pastry base.
- 29. Let the apples and raisins drain well.
- 30. Distribute the apples and raisins evenly over the dough.
- 31. Pour the quark cream over it.
- 32. Smooth out the surface.
- 33. Bake the cake in the oven for about 50 minutes.
- 34. After about 30 minutes of baking time, sprinkle the remaining almond flakes on top.
- 35. Remove the cake from the oven.
- 36. Let the cake cool on a wire rack.
