🍰 Crispy Apple Quark Bites

Ingredients
- Quark, low-fat 250 g
- Sunflower oil 100 ml
- Vanilla extract 1 tsp
- Sugar 200 g
- Wheat flour, Type 405 300 g
- Baking powder 2 tsp
- Salt pinch
- Eggs 1 pc.
- Lemon zest, grated pinch
- Apples, red 450 g
- Lemon juice 1 tsp
- Almonds, sliced 50 g
- Cinnamon 2 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius using hot air circulation.
- 2. Line two baking sheets with non-stick baking paper.
- 3. Mix the quark in a bowl with sunflower oil and vanilla extract.
- 4. Combine 100 grams of sugar, flour, baking powder, and a pinch of salt in a second bowl.
- 5. Add the wet ingredients to the flour mixture and stir everything well.
- 6. Stir the egg with the lemon zest into the dough briefly.
- 7. Remove the cores from the apples.
- 8. Cut the apples into coarse cubes of about two to three centimeters.
- 9. Squeeze lemon juice over the apple pieces and mix them lightly.
- 10. Gently fold the apple cubes and almond slivers into the dough.
- 11. Portion the dough onto the prepared baking sheets using an ice cream scoop.
- 12. Make sure the dough pieces have some space between them.
- 13. Bake the bites in the preheated oven at 180 degrees Celsius hot air for 20 to 25 minutes until golden brown.
- 14. Mix 100 grams of sugar with cinnamon in a small dish.
- 15. Roll the still hot dough pieces in the cinnamon-sugar mixture.
- 16. Serve the bites directly warm or let them cool down.
- 17. Optional: Place the trays under the grill function for 30 to 60 seconds to caramelize the sugar.
