  1. 1. Cut the leek lengthwise, remove the root tips, cut into thin rings and rinse thoroughly in a sieve. Wash the apples, halve them, remove the core and cut into thin slices. Halve the lemon and squeeze out the juice.
  2. 2. In a bowl, mix 3 tbsp. lemon juice, mustard, honey and oil well. Season with salt and pepper. Fold in the leek and apples and let it marinate for about 30 minutes.
  3. 3. Serve the apple-leek salad in small bowls and garnish with cress. Enjoy!
