🍲 Apple Pumpkin Soup with Ginger Chive Crème Fraîche

Ingredients
- onions, red 1 pc.
- hokkaido pumpkin 1 pc.
- apples, red 1 pc.
- oil 3 tbsp.
- tomato paste 2 tbsp.
- tomatoes, chopped 400 g
- vegetable broth 400 ml
- salt pinch
- pepper, black ground pinch
- brown sugar 1 tsp.
- ginger, fresh 10 g
- chives, fresh 10 g
- crème fraîche 100 g
Instructions
- 1. Halve the onion and peel it. Cut the onion into small cubes.
- 2. Wash the pumpkin thoroughly. Halve it and scrape out the seeds with a spoon.
- 3. Cut the pumpkin flesh into cubes of about 2 cm.
- 4. Peel the apple. Cut it into quarters and remove the core.
- 5. Cut the apple pieces into small cubes as well.
- 6. Heat the oil in a large pot.
- 7. Add the onions and pumpkin to the pot. Sauté them while stirring for about 3 minutes.
- 8. Stir in the tomato paste and cook it for one more minute.
- 9. Add the chopped tomatoes, the broth, and the apple cubes to the pot.
- 10. Season the soup with salt, pepper, and cane sugar.
- 11. Bring the soup to a boil.
- 12. Simmer the soup covered for about 8 to 10 minutes.
- 13. Wash the ginger and peel it. You can easily scrape off the skin with a teaspoon.
- 14. Finely chop the ginger.
- 15. Wash the chives and shake them dry.
- 16. Cut the chives into fine rings.
- 17. Mix the crème fraîche in a small bowl with the chives and the ginger.
- 18. Season the cream with salt and pepper.
- 19. Taste the apple pumpkin soup again and adjust the seasoning.
- 20. Serve the soup in bowls and add the ginger chive crème fraîche.
