🍽️ Fruity and Crispy Lentil Salad with Vegan Bratwurst

Ingredients
- lentils, brown 200 g
- apples, red 1 pc.
- carrots 2 pc.
- arugula 50 g
- parsley, fresh 10 g
- chives, fresh 5 g
- lemons 1 pc.
- olive oil 4 tbsp
- apple cider vinegar 2 tbsp
- agave syrup 1 tbsp
- mustard 2 tsp
- salt pinch
- pepper, black ground pinch
- pine nuts 25 g
- sunflower oil 1 tbsp
- vegan fried sausage 8 pc.
Instructions
- 1. Rinse the lentils under running water.
- 2. Place the lentils in a pot and cover them with about 700 milliliters of water.
- 3. Bring the water to a boil.
- 4. Cook the lentils for about 20 minutes until they are tender but still firm.
- 5. Drain the lentils in a colander.
- 6. Rinse the drained lentils with cold water to cool them down.
- 7. Wash the apple under running water.
- 8. Cut the apple into four quarters.
- 9. Remove the core and seeds from the apple quarters.
- 10. Cut the apple flesh into small cubes.
- 11. Peel the carrots.
- 12. Cut off the ends of the carrots.
- 13. Grate the carrots coarsely.
- 14. Wash the arugula under running water.
- 15. Spin the arugula dry.
- 16. Wash the parsley under running water.
- 17. Spin the parsley dry.
- 18. Remove the thick stems from the parsley.
- 19. Chop the parsley coarsely.
- 20. Wash the chives under running water.
- 21. Shake the chives dry.
- 22. Remove the thick stems from the chives.
- 23. Chop the chives coarsely.
- 24. Squeeze the lemon.
- 25. Add olive oil to a bowl.
- 26. Add apple cider vinegar to the bowl.
- 27. Add agave syrup to the bowl.
- 28. Add mustard to the bowl.
- 29. Add some lemon juice to the bowl.
- 30. Season the mixture with salt.
- 31. Season the mixture with pepper.
- 32. Whisk the ingredients in the bowl well.
- 33. Add the apple cubes to the bowl.
- 34. Add the grated carrots to the bowl.
- 35. Add the lentils to the bowl.
- 36. Add the chopped parsley to the bowl.
- 37. Add the chopped chives to the bowl.
- 38. Add the arugula to the bowl.
- 39. Mix all ingredients in the bowl well.
- 40. Heat a pan over medium heat.
- 41. Add the pine nuts to the hot pan.
- 42. Toast the pine nuts for about 2 minutes without fat.
- 43. Toast the pine nuts until they are golden brown.
- 44. Remove the toasted pine nuts from the pan.
- 45. Place the pine nuts on a plate.
- 46. Add sunflower oil to the pan.
- 47. Place the vegan bratwursts in the pan.
- 48. Fry the vegan bratwursts for about 5 minutes.
- 49. Fry the vegan bratwursts evenly until golden brown.
- 50. Plate the salad.
- 51. Place the bratwursts on the salad.
- 52. Sprinkle the toasted pine nuts over the salad.
- 53. Serve the salad.
