  1. 1. Fill a large pot with about 3 liters of water and bring it to a boil.
  2. 2. Wash the apples thoroughly, quarter them, remove the stem and seeds, and grate them coarsely.
  3. 3. Remove the core from the romaine lettuce and cut the greens into strips about 0.5 cm wide.
  4. 4. Wash the lettuce strips and spin them dry in a salad spinner.
  5. 5. Cook the spaetzle for about 5 minutes in the boiling water.
  6. 6. Then drain the spaetzle in a sieve.
  7. 7. Mix 1 tablespoon of oil, vinegar, and 2 tablespoons of water in a bowl.
  8. 8. Season the liquid with salt, pepper, and honey.
  9. 9. Stir half of the grated apples into the dressing.
  10. 10. Set the bowl with the apple dressing aside.
  11. 11. Halve the onions, peel them, and cut them into thin strips.
  12. 12. Heat 1 tablespoon of oil and 1 tablespoon of butter in a pan over medium to high heat.
  13. 13. Fry the onion strips for about 5 minutes until golden brown.
  14. 14. Add the remaining apple strips and cook them for about 3 minutes.
  15. 15. Season the apple-onion mixture with salt, pepper, and sugar.
  16. 16. Remove the pan from the heat and set the apple-onion mixture aside on a plate.
  17. 17. Add 1 tablespoon of butter, milk, and a pinch of nutmeg to the same pan.
  18. 18. Bring the mixture in the pan to a boil.
  19. 19. Reduce the heat after the mixture has boiled.
  20. 20. Add the drained spaetzle to the pan.
  21. 21. Season the spaetzle in the pan with salt and pepper.
  22. 22. Sprinkle the Gouda cheese over the spaetzle.
  23. 23. Gently fold the spaetzle until the cheese has melted.
  24. 24. Toss the dry lettuce strips with the prepared apple dressing.
  25. 25. Plate the cheese spaetzle.
  26. 26. Garnish the spaetzle with the fried apple and onion strips.
  27. 27. Serve the spaetzle together with the salad.
