🍰 Moist Apple-Ginger Cupcakes

Ingredients
- lemons 1 pc.
- apples, red 1 pc.
- butter 160 g
- sugar 150 g
- salt pinch
- vanilla sugar 8 g
- eggs 2 pc.
- wheat flour, type 405 200 g
- baking powder 1 tsp
- milk 50 ml
- ginger, fresh 30 g
- powdered sugar 75 g
- cream cheese, plain 100 g
Instructions
- 1. Squeeze half of the lemon to get the juice.
- 2. Peel the apple, remove the core, and dice the flesh into small cubes.
- 3. Place the apple cubes in a bowl and mix them with the lemon juice.
- 4. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 5. Beat the soft butter, sugar, salt, and vanilla sugar in a bowl until creamy using a hand mixer.
- 6. Add the eggs one by one into the butter mixture and mix well after each addition.
- 7. Add the flour, baking powder, and milk, and stir everything into a smooth batter.
- 8. Gently fold the diced apples into the batter.
- 9. Distribute the batter evenly into greased muffin tins.
- 10. Bake the cupcakes for about 30 to 35 minutes until they are lightly golden brown.
- 11. Peel the ginger and chop it finely.
- 12. Beat the powdered sugar, remaining soft butter, and cream cheese in a bowl until creamy.
- 13. Stir the chopped ginger into the cream.
- 14. Store the cream in the refrigerator.
- 15. Remove the cupcakes from the oven and let them cool completely on a wire rack.
- 16. Spread the ginger cream over the cooled cupcakes.
- 17. Decorate the cupcakes to your liking.
