🍰 Juicy Apple Blueberry Cake

Ingredients
- flour, Type 405 250 g
- baking powder 2 tsp
- sugar 200 g
- butter 60 g
- eggs 2 pcs
- cream yogurt, Greek style 300 g
- vanilla extract 0.5 tsp
- apples, red 2 pcs
- blueberries, fresh 150 g
- whipping cream 200 ml
- vanilla sugar 1 packet
- organic limes 2 pcs
- mint, fresh 10 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Grease a 26 cm springform pan and line it with baking paper.
- 3. Mix flour and baking powder in a small bowl.
- 4. Beat sugar, soft butter, and eggs in a large bowl until creamy.
- 5. Stir in yogurt and vanilla extract into the butter-sugar mixture.
- 6. Add the flour mixture gradually and mix everything well.
- 7. Wash the apples and blueberries and dry them.
- 8. Peel one apple, remove the core, and cut it into small cubes.
- 9. Cut the second apple into thin wedges.
- 10. Fold the apple cubes into the cake batter.
- 11. Pour the batter into the prepared pan and smooth the surface.
- 12. Insert the apple wedges vertically into the batter.
- 13. Distribute the blueberries evenly over the surface.
- 14. Bake the cake in the center of the oven for about 60 minutes until golden brown.
- 15. Remove the cake from the oven and let it cool completely.
- 16. Whip cream stiff with a pinch of salt, letting vanilla sugar trickle in.
- 17. Rinse a lime with hot water, dry it, and finely grate the zest.
- 18. Mix the lime zest into the whipped cream.
- 19. Wash mint and shake it dry.
- 20. Decorate the cake with the lime cream and fresh mint.
- 21. Serve the cake and enjoy!
