  1. 1. Wash the blueberries thoroughly and let them drain.
  2. 2. Wash the apples, quarter them, remove the core, and cut the flesh into small cubes.
  3. 3. Place three-quarters of the blueberries, the apple pieces, the sugar, the cinnamon, and the apple juice into a pot.
  4. 4. Bring the mixture to a boil and let it simmer for about 10 minutes until the fruits are soft.
  5. 5. Add the remaining blueberries and cook them for 1 to 2 minutes to keep their shape.
  6. 6. Mix the starch in a small bowl with a little cold water until a smooth paste forms.
  7. 7. Pour the starch mixture into the hot compote and stir.
  8. 8. Let the compote boil briefly to thicken, then remove it from the heat.
  9. 9. Let the compote cool down completely.
  10. 10. Wash the lemon and finely grate about one teaspoon of the zest.
  11. 11. Squeeze the juice from the lemon.
  12. 12. Mix the kefir in a bowl with the lemon zest.
  13. 13. Sweeten the kefir to taste with two teaspoons of lemon juice and honey.
  14. 14. Serve the kefir together with the cooled apple-blueberry compote.
