🍰 Apple-Blueberry Compote with Kefir

Ingredients
- Blueberries, fresh 250 g
- Apples, green 4 pcs
- Sugar 2 tbsp
- Cinnamon 0.5 tsp
- Apple juice 125 ml
- Cornstarch 1 tsp
- Organic Lemon 1 pc
- kefir 300 g
- Honey 4 tsp
Instructions
- 1. Wash the blueberries thoroughly and let them drain.
- 2. Wash the apples, quarter them, remove the core, and cut the flesh into small cubes.
- 3. Place three-quarters of the blueberries, the apple pieces, the sugar, the cinnamon, and the apple juice into a pot.
- 4. Bring the mixture to a boil and let it simmer for about 10 minutes until the fruits are soft.
- 5. Add the remaining blueberries and cook them for 1 to 2 minutes to keep their shape.
- 6. Mix the starch in a small bowl with a little cold water until a smooth paste forms.
- 7. Pour the starch mixture into the hot compote and stir.
- 8. Let the compote boil briefly to thicken, then remove it from the heat.
- 9. Let the compote cool down completely.
- 10. Wash the lemon and finely grate about one teaspoon of the zest.
- 11. Squeeze the juice from the lemon.
- 12. Mix the kefir in a bowl with the lemon zest.
- 13. Sweeten the kefir to taste with two teaspoons of lemon juice and honey.
- 14. Serve the kefir together with the cooled apple-blueberry compote.
