🍰 Crispy Apple Yeast Rolls with Lemon Glaze

Ingredients
- milk 260 ml
- yeast, fresh 0.5 pcs
- sugar 50 g
- wheat flour, Type 405 600 g
- salt pinch
- eggs 3 pcs
- butter 50 g
- apples, red 600 g
- apple juice 100 ml
- brown sugar 3 tbsp
- cinnamon 1 tsp
- raisins 50 g
- cream cheese, plain 100 g
- breadcrumbs 5 tbsp
- lemons 1 pcs
- powdered sugar 100 g
Instructions
- 1. Slightly warm the milk in a pot.
- 2. Crumble the yeast and dissolve it with one tablespoon of sugar in the lukewarm milk.
- 3. Let the yeast mixture rest covered for about 10 minutes.
- 4. In a bowl, mix flour, salt, the remaining sugar, one egg, and soft butter with the yeast mixture.
- 5. Knead everything into a smooth dough.
- 6. Let the dough rise covered for about 1 hour in a warm place.
- 7. Peel the apples, quarter them, and remove the cores.
- 8. Dice the apple pieces into small cubes.
- 9. Place the apple cubes in a pot together with apple juice, brown sugar, and cinnamon.
- 10. Bring the mixture to a boil.
- 11. Add the raisins.
- 12. Cook the apple mixture covered for about 10 minutes until soft.
- 13. Lightly mash the cooked apple mixture with a potato masher.
- 14. Let the apple mixture cool down completely.
- 15. In a bowl, mix the cream cheese with the remaining eggs.
- 16. Fold in the cooled apple mixture into the cream cheese and egg mixture.
- 17. Add enough breadcrumbs so that the filling binds well.
- 18. Preheat the oven to 180 degrees Celsius convection.
- 19. Knead the dough once more briefly.
- 20. Roll out the dough on a floured surface into a rectangle.
- 21. Spread the apple mixture evenly over the dough.
- 22. Leave a border of about 3 centimeters on the long sides.
- 23. Roll the dough up tightly from the long side.
- 24. Cut the dough into pieces about 4 centimeters thick.
- 25. Place the rolls on two baking sheets lined with parchment paper.
- 26. Let the rolls rise covered for another 20 minutes.
- 27. Bake the sheets one after the other in the preheated oven for about 20 to 25 minutes.
- 28. Halve the lemon and squeeze out the juice.
- 29. Sift the powdered sugar into a bowl.
- 30. Mix the powdered sugar with the lemon juice to create a smooth glaze.
- 31. Let the baked rolls cool for about 5 minutes.
- 32. Brush the rolls thinly with the lemon glaze.
- 33. Let the rolls cool completely.
