  2. 2. Crumble the yeast and dissolve it with one tablespoon of sugar in the lukewarm milk.
  3. 3. Let the yeast mixture rest covered for about 10 minutes.
  4. 4. In a bowl, mix flour, salt, the remaining sugar, one egg, and soft butter with the yeast mixture.
  5. 5. Knead everything into a smooth dough.
  6. 6. Let the dough rise covered for about 1 hour in a warm place.
  7. 7. Peel the apples, quarter them, and remove the cores.
  8. 8. Dice the apple pieces into small cubes.
  9. 9. Place the apple cubes in a pot together with apple juice, brown sugar, and cinnamon.
  10. 10. Bring the mixture to a boil.
  11. 11. Add the raisins.
  12. 12. Cook the apple mixture covered for about 10 minutes until soft.
  13. 13. Lightly mash the cooked apple mixture with a potato masher.
  14. 14. Let the apple mixture cool down completely.
  15. 15. In a bowl, mix the cream cheese with the remaining eggs.
  16. 16. Fold in the cooled apple mixture into the cream cheese and egg mixture.
  17. 17. Add enough breadcrumbs so that the filling binds well.
  18. 18. Preheat the oven to 180 degrees Celsius convection.
  19. 19. Knead the dough once more briefly.
  20. 20. Roll out the dough on a floured surface into a rectangle.
  21. 21. Spread the apple mixture evenly over the dough.
  22. 22. Leave a border of about 3 centimeters on the long sides.
  23. 23. Roll the dough up tightly from the long side.
  24. 24. Cut the dough into pieces about 4 centimeters thick.
  25. 25. Place the rolls on two baking sheets lined with parchment paper.
