🍰 Apple Oat Pancakes with Quark

Ingredients
- Eggs 4 pcs.
- Sugar 60 g
- Salt pinch
- Cinnamon 0.5 tsp
- Oats, fine 100 g
- Wheat flour, Type 405 250 g
- Baking powder 2 tsp
- Milk 200 ml
- Apples, red 2 pcs.
- Oil 2 tbsp
- Quark 40 % fat in total 4 tbsp
- Honey 1 tsp
Instructions
- 1. Whisk the eggs in a bowl with a hand mixer and the whisk attachment for about 3 minutes until foamy and the volume has increased significantly.
- 2. Stir in sugar, a pinch of salt, cinnamon, oat flakes, flour, and baking powder gradually. Add the milk until a slightly thick batter forms. Let the batter rest for about 10 minutes.
- 3. Wash the apples thoroughly, core them, and slice them. Heat 1 tablespoon of oil in a pan over high heat. Fry the apple slices in it for about 2 minutes. Place them on a plate to the side. Mix the quark in a bowl with 1 tablespoon of sugar.
- 4. Reheat the pan with 1 tablespoon of oil over high heat. Pour 2–3 tablespoons of batter for small pancakes into the pan. Bake for about 2–3 minutes until small bubbles appear on the surface. Place 2 apple slices on each pancake. Flip the pancakes and bake for another 1–2 minutes until golden brown.
- 5. Repeat the process with the remaining apples and batter. Plate the apple oat pancakes and serve with honey and quark. Enjoy your meal!
