🍰 Fluffy Angel Food Cake with Berry Cream Topping

Ingredients
- cornstarch 65 g
- wheat flour, Type 405 85 g
- powdered sugar 300 g
- eggs 12 pcs.
- heavy cream 300 ml
- blueberries, fresh 50 g
- raspberries, fresh 50 g
Instructions
- 1. Preheat your oven to 190 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Take a fine sieve and add the cornstarch, the flour, and 60 grams of the powdered sugar.
- 3. Gently shake the sieve to carefully sift the dry ingredients.
- 4. Place the egg whites into a large bowl.
- 5. Take a hand mixer and attach the whisk beaters.
- 6. Beat the egg whites lightly at first until they become foamy.
- 7. Take the remaining 215 grams of powdered sugar.
- 8. Slowly and continuously sprinkle the powdered sugar into the egg whites while the mixer is running.
- 9. Continue beating until the egg whites are firm and glossy.
- 10. Take a spoon and gently fold one-third of the sifted flour mixture into the egg whites.
- 11. Now add the rest of the flour mixture gradually.
- 12. Gently fold in the remaining flour until no white flour streaks are visible.
- 13. Take a Bundt cake pan (a ring-shaped cake mold).
- 14. Pour the batter into the pan.
- 15. Smooth the surface of the batter with a spatula.
- 16. Place the pan into the preheated oven.
- 17. Bake the cake for about 40 minutes.
- 18. While the cake is baking, take a bowl of cream.
- 19. Add the remaining powdered sugar to the cream.
- 20. Whip the cream with the hand mixer until stiff.
- 21. Take a bowl of berries.
- 22. Sort through the berries and remove any unripe or damaged pieces.
- 23. Rinse the berries under cold water if necessary.
- 24. Take the finished cake out of the oven after 40 minutes.
- 25. Let the cake cool down for a short while.
- 26. Take the stiffly whipped cream.
- 27. Spread the cream generously over the top of the cake.
- 28. Garnish the cake with the fresh berries.
