  1. 1. Heat the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into a small bowl.
  3. 3. Dissolve the yeast together with 1 tbsp sugar in the lukewarm milk.
  4. 4. Cover the bowl and let the mixture rest for about 15 minutes.
  5. 5. Mix the remaining sugar, flour, salt, and cut-up butter in a large bowl.
  6. 6. Add the yeast milk and the eggs.
  7. 7. Knead everything into a smooth dough.
  8. 8. Cover the bowl with a clean kitchen towel.
  9. 9. Let the dough rise in a warm place for about 1 hour until it has doubled in size.
  10. 10. Wash the orange.
  11. 11. Grate about 1 tsp of the zest finely.
  12. 12. Chop the pistachios coarsely.
  13. 13. Mix the pistachios in a bowl with the orange zest, cardamom, cinnamon, and sugar.
  14. 14. Drain the pineapple.
  15. 15. Cut the pineapple into small cubes.
  16. 16. Knead the dough again.
  17. 17. Roll the dough on a floured surface into a rectangle.
  18. 18. Brush the dough with 2 tbsp of soft butter.
  19. 19. Sprinkle the spice mixture over it.
  20. 20. Leave 2-3 cm of dough free on one long side.
  21. 21. Distribute the pineapple on the opposite side.
  22. 22. Roll the dough tightly from the pineapple side.
  23. 23. Press the free dough edge well.
  24. 24. Cut the roll into 12 pieces.
  25. 25. Place the pieces with the cut side up into a greased springform pan.
  26. 26. Line the bottom of the springform pan with baking paper.
  27. 27. Cover the pan.
  28. 28. Let the pieces rise for another 30 minutes.
  29. 29. Preheat the oven to 200 °C (convection).
  30. 30. Bake the pineapple snail cake for approx. 30-35 minutes.
  31. 31. Let the cake cool for 10 minutes.
  32. 32. Release the cake from the pan.
  33. 33. Let the cake cool completely.
  34. 34. Dust the cake with powdered sugar.
