🍰 Pineapple Snail Cake

Ingredients
- Milk 250 ml
- Yeast, fresh 1 pc.
- Brown sugar 175 g
- Wheat flour, Type 405 600 g
- Salt pinch
- Butter 120 g
- Eggs 2 pc.
- Oranges 1 pc.
- Pistachios 5 tbsp
- Cardamom, ground 0.25 tsp
- Cinnamon 0.25 tsp
- Pineapple pieces from the can 500 g
- Powdered sugar 1 tbsp
Instructions
- 1. Heat the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into a small bowl.
- 3. Dissolve the yeast together with 1 tbsp sugar in the lukewarm milk.
- 4. Cover the bowl and let the mixture rest for about 15 minutes.
- 5. Mix the remaining sugar, flour, salt, and cut-up butter in a large bowl.
- 6. Add the yeast milk and the eggs.
- 7. Knead everything into a smooth dough.
- 8. Cover the bowl with a clean kitchen towel.
- 9. Let the dough rise in a warm place for about 1 hour until it has doubled in size.
- 10. Wash the orange.
- 11. Grate about 1 tsp of the zest finely.
- 12. Chop the pistachios coarsely.
- 13. Mix the pistachios in a bowl with the orange zest, cardamom, cinnamon, and sugar.
- 14. Drain the pineapple.
- 15. Cut the pineapple into small cubes.
- 16. Knead the dough again.
- 17. Roll the dough on a floured surface into a rectangle.
- 18. Brush the dough with 2 tbsp of soft butter.
- 19. Sprinkle the spice mixture over it.
- 20. Leave 2-3 cm of dough free on one long side.
- 21. Distribute the pineapple on the opposite side.
- 22. Roll the dough tightly from the pineapple side.
- 23. Press the free dough edge well.
- 24. Cut the roll into 12 pieces.
- 25. Place the pieces with the cut side up into a greased springform pan.
- 26. Line the bottom of the springform pan with baking paper.
- 27. Cover the pan.
- 28. Let the pieces rise for another 30 minutes.
- 29. Preheat the oven to 200 °C (convection).
- 30. Bake the pineapple snail cake for approx. 30-35 minutes.
- 31. Let the cake cool for 10 minutes.
- 32. Release the cake from the pan.
- 33. Let the cake cool completely.
- 34. Dust the cake with powdered sugar.
