  1. 1. Peel the pineapple and remove the hard core.
  2. 2. Cut the pineapple into 8 thin slices.
  3. 3. Whisk the eggs, milk, sugar, and salt together well in a bowl.
  4. 4. Sift the flour and baking powder into the egg mixture.
  5. 5. Stir everything together to form a slightly creamy batter.
  6. 6. Melt 1 tablespoon of butter in a non-stick frying pan over medium heat.
  7. 7. Fry one pineapple slice for about 2 minutes on both sides.
  8. 8. Pour a ladle of batter onto the pineapple slice.
  9. 9. Tilt the pan to spread the batter evenly.
  10. 10. Cook the pancake for 1 to 2 minutes until it is golden brown.
  11. 11. Carefully flip the pancake.
  12. 12. Fry it for another minute until golden brown on the other side.
  13. 13. Remove the finished pancake from the pan.
  14. 14. Repeat steps 6 to 13 until all the pineapple and batter are used up.
  15. 15. Serve the hot pancakes with a portion of vanilla milk ice cream.
