🍰 Grilled Pineapple with Whipped Coconut Cream and Crunchy Coconut Bits

Ingredients
- Powdered sugar 4 tbsp
- Coconut flakes 5 tbsp
- Coconut milk 400 ml
- Whipping cream 250 g
- Vanilla sugar 3 tbsp
- Pineapple 1 pc
- Organic limes 1 pc
Instructions
- 1. Heat powdered sugar in a pan over medium-high heat until it melts.
- 2. Add the coconut flakes to the pan and stir constantly until they caramelize to a light brown color.
- 3. Transfer the caramelized coconut to a plate to cool and become crunchy.
- 4. Scoop out the solid part of the coconut milk (approx. 100 g) with a spoon and place it in a tall container.
- 5. Add cream and vanilla sugar to the coconut mixture.
- 6. Whip the mixture stiff using a hand mixer with the whisk attachment.
- 7. Keep the finished cream cool until you are ready to serve it.
- 8. Remove the core and the stem from the pineapple.
- 9. Peel the skin off the pineapple using a knife.
- 10. Cut the pineapple into slices about 2 cm thick.
- 11. Use a shot glass to cut out the hard center core from the slices.
- 12. Wash the lime thoroughly.
- 13. Finely grate about 1 teaspoon of the lime zest.
- 14. Preheat the grill.
- 15. Place the pineapple slices on the hot grill.
- 16. Grill the slices on both sides for approx. 2 to 3 minutes until golden brown.
- 17. Crumble the cooled caramelized coconut if necessary.
- 18. Mix the crumbled coconut with the lime zest.
- 19. Arrange the grilled pineapple on plates.
- 20. Add the coconut cream and sprinkle everything with the coconut-lime crunch.
