🍰 Lime Cakes with Icing

Ingredients
- Organic Limes 2 pcs
- Butter 100 g
- Sugar 75 g
- Salt pinch
- Vanilla Sugar 1 tsp
- Eggs 2 pcs
- Wheat flour, Type 405 250 g
- Vanilla pudding powder 37 g
- Baking powder 3 tsp
- Milk 80 ml
- Powdered sugar 200 g
- Sugar pearls 25 g
Instructions
- 1. Thoroughly rinse a lime under hot water.
- 2. Finely grate about 1 teaspoon of the lime zest.
- 3. Squeeze out the lime juice.
- 4. Place soft butter, sugar, salt, and vanilla sugar in a bowl.
- 5. Beat the butter-sugar mixture with a hand mixer until fluffy.
- 6. Work the eggs into the mixture one by one until well combined.
- 7. Fold the grated lime zest into the batter.
- 8. Mix flour, pudding powder, and baking powder in a separate bowl.
- 9. Stir in the flour mixture and the milk alternately into the butter mixture.
- 10. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 11. Line a baking tray with baking paper.
- 12. Take equal portions of dough using two spoons.
- 13. Place the dough portions on the tray with some space between them.
- 14. Bake the cakes one after another for about 15 minutes until golden brown.
- 15. Check for doneness by inserting a wooden skewer into a cake.
- 16. The batter should not stick to the wooden skewer.
- 17. Let the cakes cool completely on a wire rack.
- 18. Sift powdered sugar into a bowl.
- 19. Stir the powdered sugar with the lime juice to form a thick icing.
- 20. Spread the icing on the bottom side of the cooled cakes.
- 21. Decorate the cakes with sugar sprinkles.
- 22. Let the icing dry.
