  1. 1. Wash the lemon thoroughly under running water.
  2. 2. Cut the lemon in half.
  3. 3. Squeeze the juice out of both lemon halves.
  4. 4. Wash the rhubarb thoroughly.
  5. 5. Remove the tough skin of the rhubarb if necessary.
  6. 6. Cut the rhubarb into small pieces.
  7. 7. Pour about 500 milliliters of water into a pot.
  8. 8. Bring the water in the pot to a boil.
  9. 9. Add the rhubarb pieces to the boiling water.
  10. 10. Let the rhubarb simmer on low heat for about 20 minutes.
  11. 11. Pour the liquid through a fine sieve into a clean pot.
  12. 12. Heat the strained liquid in the pot again.
  13. 13. Add 40 tablespoons of sugar to the hot liquid.
  14. 14. Add 1 tablespoon of lemon juice.
  15. 15. Let the mixture simmer on medium heat for about 20 minutes.
  16. 16. Pour the finished syrup into clean bottles.
  17. 17. Store the bottles in the refrigerator.
  18. 18. Wash the rosemary sprigs under running water.
  19. 19. Let the rosemary drain well.
  20. 20. Take two long drink glasses.
  21. 21. Add 2 cl of rhubarb syrup to each glass.
  22. 22. Add a splash of lemon juice to each glass.
  23. 23. Fill the glasses with ice cubes.
  24. 24. Place one rosemary sprig in each glass.
  25. 25. Add 50 ml of tonic water to each glass.
  26. 26. Add 100 ml of lemon soda to each glass.
  27. 27. Enjoy your non-alcoholic rhubarb spritz.
