🍲 Refreshing Cold Spanish Almond Soup

Ingredients
- baguette 120 g
- water 750 ml
- garlic cloves 2 pcs.
- almonds, sliced 300 g
- olive oil 8 tbsp
- apple cider vinegar 2 tbsp
- salt pinch
- pepper, black ground pinch
- grapes, white 200 g
Instructions
- 1. Tear the baguette into small pieces by hand.
- 2. Place the bread pieces into a bowl.
- 3. Pour 250 milliliters of cold water over the bread.
- 4. Let the bread soak in the water for a few minutes.
- 5. Peel the garlic cloves.
- 6. Put the peeled garlic into a blender.
- 7. Add 250 grams of almonds to the blender.
- 8. Blend the garlic and almonds until fine.
- 9. Remove the soaked bread from the water.
- 10. Add the bread along with the soaking liquid to the blender.
- 11. Pour 6 tablespoons of olive oil into the mixture.
- 12. Add some vinegar.
- 13. Top up the mixture with 500 milliliters of cold water.
- 14. Blend everything into a creamy soup.
- 15. If the soup is too thick, add a little more water.
- 16. Season the soup with salt.
- 17. Season the soup with pepper.
- 18. Pour the finished soup into a bowl.
- 19. Place the bowl in the refrigerator.
- 20. Let the soup chill for at least 30 minutes.
- 21. The colder the soup is, the more refreshing it tastes.
- 22. Take the remaining sliced almonds.
- 23. Heat a frying pan.
- 24. Toast the almonds in the hot pan without fat.
- 25. Toast the almonds for about 2 minutes.
- 26. Wash the grapes.
- 27. Halve the grapes.
- 28. Place the grapes on top of the cold soup.
- 29. Sprinkle the toasted almond slices over the soup.
- 30. Drizzle the remaining olive oil over the soup.
