🍲 African Peanut Stew with Turkey Cubes and Vegetables

Ingredients
- Pork breast fillet 600 g
- Onions, red 1 pc.
- Carrots 2 pcs.
- Potatoes, mostly waxy 500 g
- Salt 1 tbsp
- Vine tomatoes 2 pcs.
- Pepper, red 2 pcs.
- Oil 3 tbsp
- Vegetable broth 700 ml
- Pepper, black ground 0.5 tsp
- Peanut butter 15 g
- Couscous 200 g
- Peanuts 25 g
Instructions
- 1. Take the meat out of the fridge and let it come to room temperature.
- 2. Peel the onion, halve it, and slice it into thin strips.
- 3. Peel the carrots, trim the ends, and dice them into small cubes.
- 4. Wash the potatoes thoroughly, peel them, and cut them into pieces about 1 cm in size.
- 5. Rinse the turkey breast, pat it dry with a kitchen towel, and chop it into coarse cubes.
- 6. Lightly salt the turkey cubes.
- 7. Wash the tomatoes, halve them, remove the stems, and dice them.
- 8. Rinse the peppers, halve them, remove seeds and stems, and slice them into thin strips.
- 9. Heat 2 tablespoons of oil in a pot over high heat.
- 10. Fry the meat cubes for about 3 minutes on all sides until they are light brown.
- 11. Remove the meat from the pot and place it on a plate.
- 12. Add 1 tablespoon of oil to the pan drippings in the pot.
- 13. Fry the onion strips for about 2 minutes in it.
- 14. Add the carrot and potato cubes and fry them together for about 1 minute.
- 15. Deglaze the mixture with broth.
- 16. Season everything with salt and pepper.
- 17. Let the stew simmer for about 5 to 7 minutes over medium heat.
- 18. Bring 300 ml of salted water to a boil in another pot.
- 19. Add the tomatoes, the pepper strips, and the peanut butter to the stew.
- 20. Let the stew simmer for another 15 minutes.
- 21. Add the couscous to the boiling salted water.
- 22. Remove the couscous pot from the heat.
- 23. Let the couscous swell covered for about 10 minutes.
- 24. Chop the peanuts coarsely.
- 25. Add the turkey cubes back to the stew shortly before the end of the cooking time.
- 26. Let the meat cubes warm up in the stew for about 3 minutes.
- 27. Adjust the stew with salt and pepper if necessary.
- 28. Serve the stew and enjoy your meal.
