🍽️ Swiss Alplermagronen with Applesauce

Ingredients
- Salt pinch
- Potatoes, mostly waxy 1 kg
- Penne Rigate 500 g
- Onions, yellow 2 pcs.
- Oil 1 tbsp
- Bacon strips 125 g
- Vegetable broth 200 ml
- Whipping cream 200 ml
- Pepper, black ground pinch
- Nutmeg, ground pinch
- Emmentaler grated 200 g
- Chives, fresh 10 g
- Applesauce 8 tbsp
Instructions
- 1. Bring about 6 liters of water to a boil in a large pot. Add a generous amount of salt to the water.
- 2. Thoroughly wash the potatoes under running water.
- 3. Peel the potatoes completely.
- 4. Cut the peeled potatoes into small, even cubes.
- 5. Add the penne pasta and the potato cubes together into the boiling salted water.
- 6. Cook the pasta and potatoes for about 10 minutes.
- 7. Check the cooking time: The pasta should be al dente (firm to the bite).
- 8. Preheat the oven to 180 °C with fan (convection).
- 9. Take the onions and cut them in half.
- 10. Peel the onion halves of their outer skin.
- 11. Cut the peeled onions into small cubes.
- 12. Heat some oil in a large pan over medium heat.
- 13. Add the onion cubes and the bacon strips to the hot pan.
- 14. Fry the onions and bacon for about 3 minutes.
- 15. Prepare the broth according to package instructions if it is not yet liquid.
- 16. Deglaze the pan mixture with the broth.
- 17. Add the cream to the pan.
- 18. Season the sauce with freshly ground pepper.
- 19. Grate some nutmeg over the sauce.
- 20. Let the sauce simmer gently for about 3 minutes.
- 21. Drain the cooked penne and potatoes in a colander.
- 22. Place the drained pasta and potatoes into a baking dish.
- 23. Mix the pasta and potatoes thoroughly with the bacon-cream sauce.
- 24. Grate the Emmental cheese finely.
- 25. Evenly sprinkle the pasta-potato mixture with the grated cheese.
- 26. Place the baking dish into the preheated oven.
- 27. Bake the Alplermagronen for about 15 minutes in the oven.
- 28. Wash the fresh chives under cold water.
- 29. Dry the chives thoroughly.
- 30. Cut the chives into fine rings.
- 31. Carefully remove the hot baking dish from the oven.
- 32. Portion the Alplermagronen onto individual plates.
- 33. Sprinkle the plated dishes with the chive rings.
- 34. Serve the Alplermagronen with a side of applesauce.
