🍽️ Swiss Alplermagronen with Apple Sauce and Crispy Onions

Ingredients
- apples, red 4 pcs.
- salt pinch
- sugar pinch
- onions, yellow 2 pcs.
- garlic cloves 1 pc.
- potatoes, mostly waxy 400 g
- oil 1 tbsp
- whipping cream 200 ml
- vegetable broth 1 L
- macaroni 500 g
- chives, fresh 10 g
- Gouda, grated 200 g
- pepper, black ground pinch
- roasted onions 4 tbsp
Instructions
- 1. Wash the apples thoroughly under running water.
- 2. Quarter the apples and remove the core.
- 3. Cut the apple pieces into small cubes.
- 4. Place the apple cubes into a pot.
- 5. Pour about 150 milliliters of water over the apples.
- 6. Add a pinch of salt and a pinch of sugar.
- 7. Heat the pot over medium heat.
- 8. Cover the pot with a lid.
- 9. Simmer the apples for about 10 minutes.
- 10. Stir the apples occasionally while cooking.
- 11. Halve the onions.
- 12. Peel the onions.
- 13. Cut the onions into thin strips.
- 14. Peel the garlic.
- 15. Finely chop the garlic.
- 16. Peel the potatoes.
- 17. Cut the potatoes into cubes.
- 18. Add oil to a pot.
- 19. Heat the oil over medium-high heat.
- 20. Add the onion strips to the hot oil.
- 21. Add the chopped garlic.
- 22. Fry the onions and garlic for about 2 to 3 minutes until golden brown.
- 23. Remove the onions and garlic from the pot.
- 24. Let the onions drain on kitchen paper.
- 25. Add cream to the same pot.
- 26. Add vegetable broth to the pot.
- 27. Bring the cream and broth to a boil.
- 28. Add the potato cubes to the boiling liquid.
- 29. Add the macaroni to the pot.
- 30. Reduce the heat to low to medium.
- 31. Cover the pot again.
- 32. Simmer the pasta and potatoes for about 10 to 12 minutes.
- 33. Check if the pasta and potatoes are soft.
- 34. Wash the chives.
- 35. Dry the chives thoroughly.
- 36. Cut the chives into thin rings.
- 37. Wait until all the liquid has been absorbed.
- 38. Return the fried onions and garlic to the pot.
- 39. Add the cheese to the pasta.
- 40. Gently fold the ingredients into the pasta.
- 41. Season the mixture generously with salt.
- 42. Season the mixture with pepper.
- 43. Puree the apple compote to your liking.
- 44. Decide whether you prefer the compote chunky or smooth.
- 45. Plate the Alplermagronen.
- 46. Place the apple compote next to the pasta.
- 47. Sprinkle the crispy fried onions over the dish.
- 48. Sprinkle the chive rings over the dish.
