🍲 Lentil Stew with Vegetables

Ingredients
- 150 red lentils
- 1 carrot
- 1 zucchini
- 1 onion
- 2 garlic cloves
- 500 vegetable broth
- 1 paprika powder
- 2 olive oil
- 1 thyme
Instructions
- 1. Dice onion, garlic, carrot, and zucchini and sauté in olive oil.
- 2. Add red lentils and paprika powder and sauté briefly.
- 3. Add vegetable broth and bring to a boil.
- 4. Reduce heat and let the stew simmer for 20 minutes until lentils are soft.
- 5. Season with thyme and serve.
