🥘 Spanish Lentil Spinach Bowl with Egg

Ingredients
- 500 g Green lentils (pre-cooked)
- 200 g Fresh spinach
- 1 Stk Onion
- 4 Stk Hard-boiled eggs
- 150 g Red bell pepper (diced)
- 30 ml Olive oil
- 5 g Cumin (ground)
- nach Bedarf Salt and pepper
- 20 ml Lemon juice
Instructions
- 1. Dice the onion and the bell pepper into small cubes.
- 2. Heat the olive oil in a large pan.
- 3. Sauté the onion and pepper for 5 minutes until soft.
- 4. Add the pre-cooked lentils and cumin, and warm everything for 3 minutes.
- 5. Add the spinach and stir until it wilts.
- 6. Season the mixture with salt, pepper, and lemon juice.
- 7. Cut the hard-boiled eggs into quarters.
- 8. Fill the bowls with the lentil mixture and place the eggs on top.
