🍛 Lentil Curry with Spinach and Coconut Milk

Ingredients
- 200g Green Lentils
- 100g Fresh Spinach
- 400ml Coconut Milk
- 1 Onion
- 2 Zehen Garlic
- 1 Stück Ginger
- 2 EL Curry Powder
- nach Geschmack Salt
- nach Geschmack Pepper
Instructions
- 1. Bring lentils to a boil in a pot of water and cook for 15 minutes.
- 2. Finely chop onion, garlic, and ginger and sauté in a large pot.
- 3. Add curry powder and toast briefly.
- 4. Add coconut milk and cooked lentils, bring to a simmer.
- 5. Add fresh spinach and simmer for 5 minutes.
- 6. Season with salt and pepper and serve.
