🍽️ Lemon-Herb Crusted Salmon Fillet in the Air Fryer

Ingredients
- 200g Salmon fillet
- 1 EL Lemon juice
- 1 EL, gehackt Parsley
- 1 EL, gehackt Dill
- 15g Butter
- 30g Panko breadcrumbs
- 1 TL Lemon zest
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Finely chop the parsley and dill. Important: don't chop them too small, or the herbs will burn.
- 2. Melt the 15 g butter in the microwave or a saucepan. Let it cool slightly so it doesn't cook.
- 3. Mix the lukewarm butter with the lemon juice, lemon zest, herbs, salt, and pepper.
- 4. Pat the 200 g salmon fillets dry with paper towels. Never wash them, as this makes them mushy.
- 5. Spread half of the herb butter over the salmon fillets. This seasons the fish from the inside.
- 6. Let the marinated fillets sit for 10 minutes. This allows the flavour to penetrate the fish.
- 7. Mix the 30 g panko breadcrumbs with the remaining herb butter. The mixture should be crumbly.
- 8. Press the fillets into the panko mixture. Turn them until they are evenly coated.
- 9. Preheat the air fryer to 180 °C. This takes about 3 minutes and creates a crispy crust.
- 10. Place the fillets in the basket. Make sure they don't touch so the air can circulate.
- 11. Cook the salmon at 180 °C for 12 minutes, until golden brown. Flip the fillets after 6 minutes for even browning.
- 12. Check for doneness: the fish should flake easily at the thickest point. Don't overcook it.
- 13. Let the fillets rest in the air fryer for 2 minutes. This redistributes the juices evenly throughout the fish.
- 14. Carefully remove the fillets. The crust should be golden brown and firm, not soft.
- 15. Arrange the salmon on plates. It's perfect when the crust is crispy and the fish remains juicy.
