  1. 1. Cut the chicken into 4 equal cutlets and lightly pound them flat.
  2. 2. Season the meat with salt and oregano. Coat the cutlets briefly in flour and shake off excess flour.
  3. 3. Fry the chicken cutlets in 1 tbsp of oil on each side for approx. 4 minutes until golden brown and cooked through.
  4. 4. Remove the chicken from the pan. Fry the diced zucchini in the same pan for 5 minutes.
  5. 5. Add the halved cherry tomatoes and garlic and fry for another 3 minutes.
  6. 6. Stir lemon juice and lemon zest into the vegetables. Return the chicken to the pan to warm through.
