🍋 Crispy Chicken Cutlets with Lemon and Vegetables

Ingredients
- 400 g Chicken breast fillet
- 30 ml Lemon juice
- 1 Stk Lemon (zested)
- 2 Stk Garlic cloves (pressed)
- 200 g Zucchini
- 150 g Cherry tomatoes
- 40 g Wheat flour (for dredging)
- 3 EL Olive oil
- 1 TL Dried oregano
- 1/2 TL Salt
Instructions
- 1. Cut the chicken into 4 equal cutlets and lightly pound them flat.
- 2. Season the meat with salt and oregano. Coat the cutlets briefly in flour and shake off excess flour.
- 3. Fry the chicken cutlets in 1 tbsp of oil on each side for approx. 4 minutes until golden brown and cooked through.
- 4. Remove the chicken from the pan. Fry the diced zucchini in the same pan for 5 minutes.
- 5. Add the halved cherry tomatoes and garlic and fry for another 3 minutes.
- 6. Stir lemon juice and lemon zest into the vegetables. Return the chicken to the pan to warm through.
