🥗 Larb (Thai Minced Meat Salad)

Ingredients
- 250 g chicken mince
- 1 onion
- 2 EL lime juice
- 2 EL fish sauce
- 1 TL chili powder
- 30 g fresh mint
- 2 spring onion
- 50 g rice
Instructions
- 1. Toast the rice in a preheated oven until golden.
- 2. Cook chicken mince in a pan until fully cooked.
- 3. Finely chop onion and spring onion.
- 4. Mix cooked chicken with onion, lime juice, fish sauce, and chili powder.
- 5. Grind toasted rice in a mortar and fold into the salad.
- 6. Garnish with fresh mint leaves and serve.
