🐟 Salmon Sweet Potato Tray Bake

Ingredients
- 400 g Salmon fillet
- 400 g Sweet potato
- 200 g Zucchini
- 200 g Cherry tomatoes
- 25 ml Olive oil
- 5 g Dried thyme
- 5 g Salt
- 1 Stk Lemon
Instructions
- 1. Preheat the oven to 200 degrees Celsius top/bottom heat.
- 2. Wash the sweet potato and cut it into small cubes. Wash the zucchini and cut it into half slices.
- 3. Place the vegetables on a baking sheet with baking paper. Add the cherry tomatoes.
- 4. Drizzle the vegetables with olive oil, thyme, and salt. Mix well to ensure everything is coated.
- 5. Place the salmon fillets on top of the vegetables. Season them lightly with salt and squeeze some lemon juice over them.
- 6. Bake the tray in the oven for 18 minutes until the salmon is cooked and the vegetables are soft.
- 7. Remove the tray from the oven and let it rest for 2 minutes before portioning.
