🍲 Pumpkin Lentil Soup

Ingredients
- 300 g Hokkaido Pumpkin
- 150 g Green Lentils
- 1 Onion
- 1 Carrot
- 750 ml Vegetable Broth
- 1 TL Ginger
- 2 EL Olive Oil
- 1 TL Cumin
Instructions
- 1. Peel and cube pumpkin and carrot.
- 2. Dice onion and sauté in oil.
- 3. Add pumpkin and carrots and sauté for a few minutes.
- 4. Add lentils and broth, bring to a boil, and simmer for 30 minutes.
- 5. Add ginger and cumin, stir well.
- 6. Puree with an immersion blender and season to taste.
