🥟 Pumpkin-Peperoni Dumplings (Vegetarian)

Ingredients
- 300 g hokkaido pumpkin
- 500 g puff pastry
- 1 Stk onion
- 150 g feta cheese
- 50 g dried cranberries
- 2 Zweige fresh rosemary
- 2 Esslöffel olive oil
- 1 Stk egg yolk
- 1 Esslöffel sesame seeds
- 1 Prise salt
- 1 Prise sugar
Instructions
- 1. Wash the pumpkin, remove the inside, and boil it in salted water for approx. 15 minutes until tender. Then mash it into a fine puree and stir in 1 pinch of salt and 1 pinch of sugar.
- 2. Dice the onion finely and sauté it in 1 tablespoon of olive oil until translucent. Remove from the heat and mix it with the pumpkin puree, chopped cranberries, and crumbled feta cheese.
- 3. Divide the puff pastry into 4 equal squares. Place a spoonful of filling in the center of each square.
- 4. Fold each corner of the square towards the center to form a rustic packet. Press the edges firmly together to seal the filling.
- 5. Whisk the egg yolk with a tablespoon of water. Brush the packets with this mixture and sprinkle with sesame seeds and chopped rosemary.
- 6. Place the packets on a baking sheet lined with baking paper. Bake them for 20 minutes at 200 degrees until golden brown and puffed up.
