🥔 Cross-Wiper Patatas Bravas with Garlic Mayo

Ingredients
- 800 g Potatoes (waxy)
- 1 Stk Red bell pepper
- 30 g Tomato paste
- 5 g Sweet paprika powder
- 2 g Chili powder
- 4 Zehen Garlic
- 150 g Mayonnaise
- 100 ml Olive oil
- 10 g Salt
- 5 g Sugar
Instructions
- 1. Wash the potatoes and cut them into large cubes (approx. 2x2 cm). Place them in a salt-water mixture (10g salt per 1 liter water) and let them soak for 10 minutes.
- 2. Heat 80 ml of olive oil in a large pan over medium heat. Remove the potatoes from the water and dry them thoroughly. Fry the potato cubes in the oil until golden brown and crunchy, then remove them from the pan.
- 3. Press the garlic cloves through a press or chop them finely. Cut the bell pepper into small cubes. Fry the garlic and pepper in the remaining oil for 3 minutes.
- 4. Stir the tomato paste, sweet paprika, and chili into the pan and toast the spices for 1 minute. Add 100 ml of water and the sugar. Simmer the sauce for 5 minutes until thickened. Salt to taste.
- 5. Mix the mayonnaise with 1 finely chopped garlic clove and a pinch of salt for the garlic mayo. Arrange the fried potatoes on a plate and top with the pepper sauce. Serve with the garlic mayo.
