🥗 Chickpea and Spinach Salad

Ingredients
- 400 g Chickpeas (canned)
- 150 g Fresh spinach
- 1 Stück Lemon
- 3 EL Olive oil
- 1 Zehe Garlic
- 1/2 TL Salt
- 1/2 TL Black pepper
- 50 g Sun-dried tomatoes
Instructions
- 1. Open the can of chickpeas, drain the liquid, and rinse the chickpeas under cold water.
- 2. Wash the spinach thoroughly and pat it dry lightly.
- 3. Cut the sun-dried tomatoes into small strips.
- 4. Squeeze the juice from half a lemon. Peel the garlic clove and press it finely.
- 5. In a small bowl, mix the olive oil, lemon juice, salt, and pepper to form a dressing.
- 6. Add the spinach, chickpeas, and tomato strips to a large bowl.
- 7. Pour the dressing over the salad and toss everything gently.
- 8. Season with more salt or pepper if needed.
- 9. Serve the salad immediately as a cold meal or side dish.
