🍲 Khoresht-e Bademjan (Eggplant Stew)

Ingredients
- 2 eggplants
- 1 onion
- 2 tomatoes
- 4EL oil
- 1TL turmeric
- 1/2TL cinnamon
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Cube eggplants and sauté in oil.
- 2. Add onion and sauté until golden brown.
- 3. Chop tomatoes and add to the pot.
- 4. Add turmeric and cinnamon, mix well.
- 5. Add water and simmer for 1 hour.
- 6. Season with salt and pepper and serve.
