🍝 Khao Soi - Vegetarian Noodle Soup

Ingredients
- 200g Tofu
- 200g Egg noodles
- 400ml Coconut milk
- 3 EL Khao Soi curry paste
- 1 Stk Onion
- 200g Fresh vegetables (e.g. carrots, bell pepper)
Instructions
- 1. Cut tofu into cubes and sauté.
- 2. Dice onion and add until soft.
- 3. Add Khao Soi curry paste and sauté briefly.
- 4. Add coconut milk and 500ml water, bring to a boil and simmer for 20 minutes.
- 5. Cook egg noodles according to package instructions.
- 6. Place noodles in bowls and pour soup over. Garnish with fresh vegetables.
