🍝 Khao Soi - Thai Noodle Soup

Ingredients
- 200g Chicken or beef
- 200g Egg noodles
- 400ml Coconut milk
- 3 EL Khao Soi curry paste
- 1 Stk Onion
- 1 Handvoll Coriander
Instructions
- 1. Cut meat into cubes and sauté in a pan.
- 2. Dice the onion and add it until soft.
- 3. Add Khao Soi curry paste and sauté briefly.
- 4. Add coconut milk and 500ml water, bring to a boil and simmer for 20 minutes.
- 5. Cook the egg noodles according to package instructions.
- 6. Place noodles in bowls and pour the soup over them. Garnish with fresh coriander.
