🍖 Khao Soi Chicken

Ingredients
- 300 g Chicken (cut into pieces)
- 400 ml Coconut milk
- 3 EL Khao Soi curry paste
- 200 g Egg noodles
- 1 Onion (sliced)
- 30 g Coriander (fresh)
- 1 Lime (sliced)
- 2 EL Fish sauce
Instructions
- 1. Sear the chicken in a pot.
- 2. Add onion and sauté until soft.
- 3. Add Khao Soi curry paste and sauté for 2 minutes.
- 4. Stir in coconut milk and bring to a boil.
- 5. Simmer for about 30 minutes, then cook the egg noodles.
- 6. Serve with fresh coriander and lime slices.
