1. Cut the cabbage, carrots, and onions into very fine, thin strips about 2.5 centimeters long. You can do this by hand or use a food processor.
2. Combine the cabbage, carrots, and onions in a large bowl. Whisk the remaining ingredients in a separate bowl, adding the mustard if desired. Pour this mixture over the vegetables and season to taste.
3. Cover the bowl and refrigerate the coleslaw for at least 8 hours, preferably 12 to 15 hours, to let the flavors meld. Remove it from the fridge 30 minutes before serving to let it reach room temperature.
4. This coleslaw pairs best as a side dish with hamburgers, pulled pork, hot dogs, grilled pork or chicken, and of course, any barbecue.
