Ingredients
- 200 g ladyfinger biscuits
- 500 ml whipping cream
- 250 g mascarpone
- 120 g sugar
- 3 lemons (juice & zest)
Instructions
- 1. Whip the cream until stiff, then mix the mascarpone with sugar, lemon juice, and zest. Gently fold in the cream until a light mixture forms.
- 2. Line a bowl with cling film and arrange ladyfingers on the bottom and sides. You can lightly soak them in lemon juice.
- 3. Pour the lemon cream into the bowl, smooth it out, and add another layer of ladyfingers on top. Chill the cake for at least 4 hours, then invert it and serve.
