🍽️ Crispy Lemon Chicken with Oven Potatoes

Ingredients
- 4 chicken thighs
- 800 g young potatoes
- 2 shallots
- 1 organic lemon
- 80 g bacon
- 1 tbsp vegetable oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika powder
- 1 tbsp fresh herbs (rosemary & thyme)
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan-assisted.
- 2. Line a baking tray with baking paper.
- 3. Slice the small potatoes.
- 4. Slice the shallots.
- 5. Finely chop the fresh herbs.
- 6. Dice the bacon into small pieces.
- 7. Place the potato slices in a bowl.
- 8. Add the vegetable oil and the chopped herbs.
- 9. Season the potatoes with salt and pepper.
- 10. Mix everything well until the potatoes are evenly coated.
- 11. Spread the potatoes evenly on the prepared baking tray.
- 12. Place the tray in the oven for 10 minutes.
- 13. Rub the chicken drumsticks with a little oil.
- 14. Season the chicken with salt, pepper, and paprika powder.
- 15. Remove the baking tray from the oven after 10 minutes.
- 16. Distribute the shallot slices on the tray.
- 17. Sprinkle the diced bacon over the potatoes.
- 18. Place a few lemon slices on the tray.
- 19. Place the seasoned chicken drumsticks on top of the vegetables.
- 20. Put the tray back into the oven.
- 21. Bake the chicken until it is golden brown and crispy.
