🍰 Roll Cake with Blackberries: Fruity Cake Delight to Bake

Ingredients
- 4 eggs
- 120 g sugar
- 100 g flour
- 1 tsp baking powder
- 250 g blackberries
- 250 ml cream
- 200 g cream cheese
- 2 tbsp powdered sugar
- 1 packet vanilla sugar
Instructions
- 1. Beat eggs with sugar until frothy. Gently fold in flour and baking powder and spread the batter onto a baking sheet. Bake at 180 °C for about 10 to 12 minutes. Then turn out onto a kitchen towel and let cool.
- 2. Whip the cream until stiff. Mix cream cheese, powdered sugar, and vanilla sugar well and fold in the whipped cream. Puree or lightly crush the blackberries and stir them into the cream.
- 3. Cut the sponge cake into even strips, spread with the cream, and roll them up one by one. Arrange the strips in a spiral to form the characteristic rolled cake. Chill and decorate before serving.
