🍽️ Creamy Asparagus Potato Casserole with Ham

Ingredients
- 800 g potatoes (waxy)
- 500 g white asparagus
- 250 g green asparagus
- 150 g ham cubes
- 150 g grated cheese (e.g. Gouda)
- 1 onion
- 200 ml cream
- 100 ml milk
- 2 eggs
- 2 tbsp butter
- salt
- pepper
- nutmeg
- fresh herbs to taste
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Grease a baking dish with some butter.
- 3. Peel the potatoes and slice them thinly.
- 4. Parboil the potato slices in salted water for about 10 minutes.
- 5. Peel the white asparagus completely.
- 6. Peel the green asparagus only at the bottom end.
- 7. Cut the asparagus into bite-sized pieces.
- 8. Cook the asparagus in water for 5 minutes.
- 9. Alternatively, briefly sauté the asparagus in butter.
- 10. Dice the onion finely.
- 11. Sauté the onion cubes until translucent.
- 12. Briefly fry the ham cubes if desired.
- 13. Mix the cream, milk, and eggs in a bowl.
- 14. Season the liquid with salt, pepper, and grated nutmeg.
- 15. Layer the potatoes, asparagus, onions, and ham in the baking dish.
- 16. Pour the egg mixture over the layers.
- 17. Sprinkle grated cheese over the casserole.
- 18. Bake the casserole in the oven for about 30 minutes.
- 19. Remove the casserole when it is golden brown and crispy.
- 20. Garnish the finished casserole with fresh herbs.
- 21. Serve the casserole immediately while warm.
