  1. 1. Beat the eggs with sugar until frothy. Then slowly mix in the oil. Stir in the grated carrots and ground almonds and mix everything well. Finally, gently fold in the baking powder.
  2. 2. Pour the batter into a greased springform pan (26 cm) and bake in a preheated oven at 180 °C (top/bottom heat) for about 45 to 50 minutes. Let it cool down completely afterwards.
  3. 3. If desired, prepare a glaze from cream cheese, powdered sugar and a little lemon juice and spread it over the cooled cake. Garnish with chopped pistachios or small marzipan carrots.
