🍽️ Parmigiana di Melanzane: The Quick Air Fryer Recipe!

Ingredients
- 1 eggplant
- 250ml tomato passata
- 1 garlic clove
- 100g mozzarella
- 50g Parmigiano
- 30g fresh basil
- 1 pinch salt
- 1 tbsp vegetable oil
- 1 pinch pepper
Instructions
- 1. First, preheat the air fryer to 200 degrees. In the meantime, slice the eggplant into approximately 1 cm thick pieces, pat them dry, and brush them with a bit of oil.
- 2. For the tomato sauce, sauté the finely chopped garlic in a bit of oil, then deglaze with the tomato passata. Season with salt, pepper, and a bit of fresh basil.
- 3. Season the eggplant slices with a bit of salt and pepper, then place them directly in the preheated air fryer. Roast for about 12 minutes until they are golden brown and tender, flipping them regularly for even cooking.
- 4. Then, generously coat the slices with tomato sauce and top with mozzarella and grated Parmesan.
- 5. Bake the parmigiana in the air fryer for an additional 1-2 minutes until the cheese is melted. Garnish with fresh basil leaves and enjoy warm!
