🍽️ One Pot Pasta with Tomato & Mozzarella

Ingredients
- 250 g pasta (e.g., penne or fusilli)
- 400 ml strained tomatoes
- 300 ml vegetable broth
- 150 g mozzarella
- 2–3 fresh tomatoes
- 1 tbsp vegetable broth powder or cubes
- 1 tsp salt
- 1/2 tsp pepper
- 10 g fresh basil leaves
- 1 tbsp olive oil (optional)
Instructions
- 1. In a large pot, combine vegetable broth, strained tomatoes, and spices, and bring to a boil.
- 2. Add the pasta, stir everything well, and simmer on medium heat with the lid on until the pasta is almost cooked (see time on the package).
- 3. Wash the tomatoes and halve them, tear the mozzarella into pieces, separate the basil leaves, and chop them roughly.
- 4. Once the pasta is al dente, fold in the tomatoes, basil, and mozzarella, and mix everything well.
- 5. Let it simmer for another 2–3 minutes on low heat so the mozzarella melts slightly – and it's ready to serve!
