🍰 Mini Carrot Cake: The Simple Recipe

Ingredients
- 200 g carrots
- 150 g flour
- 100 g sugar
- 1 packet vanilla sugar
- 2 eggs
- 100 ml vegetable oil
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp salt
- 150 g cream cheese
- 50 g powdered sugar
- 1 tsp lemon juice
Instructions
- 1. Peel the carrots and grate them finely.
- 2. Beat the eggs, sugar, and vanilla sugar together until frothy. Then stir in the oil. Combine the flour, baking powder, cinnamon, and salt and fold them into the batter. Finally, mix in the grated carrots.
- 3. Distribute the batter into muffin tins and bake in a preheated oven at 180 °C for about 25 minutes. Then let them cool completely.
- 4. Stir the cream cheese, powdered sugar, and lemon juice until creamy.
- 5. Spread the frosting onto the cooled mini carrot cakes and decorate as desired.
