🍽️ Classic Flädle Soup: The Recipe for Warming Up!

Ingredients
- 1 kg soup meat
- 2 onions
- 1 celeriac
- 3 carrots
- 2 leeks
- 1,5 bunch parsley
- 2 tbsp butter
- 2 l water
- 300 g flour
- 1/2 bunch chives
- 3 eggs
- 400 ml milk
- 1/2 tsp baking powder
- 1 tsp nutmeg
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- 1. First, halve the onions and sprinkle the cut sides with a little sugar. Heat some butter in a pot and caramelize the onions on the sugar side to get an intense flavor!
- 2. Meanwhile, peel the celeriac and carrots and cut them into coarse cubes. Wash the leek thoroughly and cut it into pieces as well.
- 3. Deglaze the onions with water and add the meat as well as the cut vegetables and a whole bunch of parsley. Let everything simmer for about 1,5 hours.
- 4. In the meantime, you can prepare the Flädle. Mix flour, baking powder, and nutmeg with the eggs. Stir in the milk gradually until a smooth dough forms. Chop the half bunch of parsley, mix it into the dough, and season everything with salt and pepper.
- 5. Heat some butter in a large pan and bake the dough in portions into thin pancakes. Let them cool down, then roll them up and cut them into strips.
- 6. When the broth is well extracted, strain it and season the clear broth with a little salt. Pour the hot soup over the pancake strips and garnish with chopped chives!
