  1. 1. First, halve the onions and sprinkle the cut sides with a little sugar. Heat some butter in a pot and caramelize the onions on the sugar side to get an intense flavor!
  2. 2. Meanwhile, peel the celeriac and carrots and cut them into coarse cubes. Wash the leek thoroughly and cut it into pieces as well.
  3. 3. Deglaze the onions with water and add the meat as well as the cut vegetables and a whole bunch of parsley. Let everything simmer for about 1,5 hours.
  4. 4. In the meantime, you can prepare the Flädle. Mix flour, baking powder, and nutmeg with the eggs. Stir in the milk gradually until a smooth dough forms. Chop the half bunch of parsley, mix it into the dough, and season everything with salt and pepper.
  5. 5. Heat some butter in a large pan and bake the dough in portions into thin pancakes. Let them cool down, then roll them up and cut them into strips.
  6. 6. When the broth is well extracted, strain it and season the clear broth with a little salt. Pour the hot soup over the pancake strips and garnish with chopped chives!
