  2. 2. Meanwhile, peel the shallots and dice them finely. Wash fresh herbs like dill or parsley and chop them finely. Slice the cornichons into thin rounds.
  3. 3. For the dressing, mix olive oil, white wine vinegar, and mustard well. Add the shallots, herbs, and cornichons and season with salt and pepper. Place the still warm potatoes in a bowl and gently toss with the dressing. Let it sit for a short while and then serve.
