🥗 Potato Salad with Mustard Dressing

Ingredients
- 800 g firm-cooking potatoes
- 2 shallots
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 1–2 tbsp Dijon mustard
- 1 tsp salt
- 1/2 tsp pepper
- 3 tbsp fresh herbs (e.g. dill or parsley)
- 4–5 cornichons
Instructions
- 1. Clean the potatoes thoroughly and halve or quarter them depending on size. Cook in salted water for about 15 minutes until tender. Then drain and let them steam dry for a moment.
- 2. Meanwhile, peel the shallots and dice them finely. Wash fresh herbs like dill or parsley and chop them finely. Slice the cornichons into thin rounds.
- 3. For the dressing, mix olive oil, white wine vinegar, and mustard well. Add the shallots, herbs, and cornichons and season with salt and pepper. Place the still warm potatoes in a bowl and gently toss with the dressing. Let it sit for a short while and then serve.
