  2. 2. Heat some oil in a pot and sauté the prepared vegetables along with the spices. After a few minutes, add the lentils and deglaze with vegetable broth, coconut milk, and diced tomatoes.
  3. 3. Let everything simmer for about 20 minutes. Once the carrots and potatoes are tender, you can puree the soup slightly, keeping some texture.
  4. 4. Serve the Harira hot and garnish with fresh coriander!
