🍽️ Harira Recipe - Vegan Moroccan Red Lentil Soup

Ingredients
- 300g red lentils
- 2 cans chopped tomatoes
- 1 garlic clove
- 1 red onion
- 2 carrots
- 3 potatoes
- 400ml coconut milk
- 500ml vegetable broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp turmeric
- 2 tbsp olive oil
- chopped coriander
- salt and pepper
Instructions
- 1. First, finely chop the onion and garlic. Peel the potatoes and carrots, then cut them into small cubes.
- 2. Heat some oil in a pot and sauté the prepared vegetables along with the spices. After a few minutes, add the lentils and deglaze with vegetable broth, coconut milk, and diced tomatoes.
- 3. Let everything simmer for about 20 minutes. Once the carrots and potatoes are tender, you can puree the soup slightly, keeping some texture.
- 4. Serve the Harira hot and garnish with fresh coriander!
