🍽️ Fluffy Spinach Dumplings

Ingredients
- 250 g fresh spinach
- 2 tbsp butter
- 1 medium onion
- 250 ml warm milk
- 4 day-old rolls
- 2 eggs
- 100 g spicy cheese (e.g. Parmesan, grated)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
- 2 tbsp flour
- 4 tbsp melted butter for serving
- 2 tbsp grated Parmesan for serving
Instructions
- 1. Wash fresh spinach thoroughly, blanch briefly and squeeze well. Then chop finely. For frozen spinach: thaw and drain thoroughly.
- 2. Cut the onion into small pieces and sweat in a little butter until translucent. Let cool slightly together with the spinach.
- 3. Place roll cubes in a large bowl, pour warm milk over them and let soak briefly. Then add eggs, cheese, spinach and onions. Season with salt, pepper and nutmeg and mix well. The mixture should be moldable; if necessary, work in a little flour.
- 4. Form equal-sized dumplings with moist hands.
- 5. Heat lightly salted water in a large pot, but do not bring to a boil. Add the dumplings and let simmer for about 15 minutes until they rise to the surface.
- 6. Drain the finished dumplings, pour melted butter over them and sprinkle with grated Parmesan.
