🍽️ Creamy Orange Risotto: Fruity, aromatic, and easy to make

Ingredients
- 300 g risotto rice
- 2 organic oranges
- 1 small onion
- 800 ml vegetable broth
- 100 ml white wine
- 40 g butter
- 50 g parmesan
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- 1. Rinse the oranges thoroughly and grate the zest finely. Then squeeze out the juice. Chop the onion and keep the vegetable broth warm in a separate pot.
- 2. Heat the olive oil and half of the butter in a large pot. Sauté the onions until translucent and add the risotto rice. Toast briefly and then deglaze with white wine. Gradually add the hot vegetable broth and stir regularly.
- 3. After about 18 to 20 minutes, stir in the orange juice and some of the grated zest. Fold in the parmesan and the remaining butter and stir the risotto until creamy. Season with salt and pepper and enjoy immediately.
